Edit on 06/17/16: Less than 24 hours after I wrote this post various news outlets disclosed that Disney employees reported problems to management regarding guests feeding gators – for 14 months. I have to rescind my below comment on it “probably not” being Disney’s fault. If they were made aware of the issue and did nothing, clearly they are at fault.
I’ve been semi-obsessed with gators for a few years now and consider myself fairly educated on the reptiles.

I am back.
Things were getting crazy right up before the wedding, and I had to take some blogging time off. Then of course, I was on my honeymoon. But now I’m ready to write.
As I transition to my new married name, my website will follow suit. Eventually, this will become ErinNudi.com.
And yes, that is Nudi, as in, Al Bundy goes to the nudie bar.
One of the biggest challenges of this whole marriage thing will certainly be getting used to having a non-normal last name.

The past few years I’ve been more into bird watching than I used to be. I’m going to try keeping up the bird feeders and “birdbath” (it’s a small thing hanging from the tree, not a stationary one) as the winter approaches and see what happens. There must be some non-migratory birds that will hang around, right?
Over the late summer and early fall we’ve had multiple chickadees, a cardinal and, more frequently as of late, a blue jay.
The blue jay is a big bully at the bird feeder, let me tell you. He screeches as he flies in, making sure everyone gets out of the way so he can eat as much as he wants.

I had never seen a Muscovy duck until I stayed at the farm/bed and breakfast that I ended up getting engaged at.
I was literally on the phone with my mother, giving her the epic news that I am engaged, and while I’m talking I see a Muscovy duck viciously, er, forcing himself on a mallard duck.

After making awesome chicken Caesar lasagna rolls, I was inspired to make regular lasagna rolls. Although regular lasagna does usually keep well for leftovers, it’s nice to have the option the lasagna rolls give you of only preparing exactly what you need.
I saw a lasagna roll on Pinterest, but it only led to a picture so I didn’t find an actual recipe. So, I went off of a regular cheese lasagna recipe I typically use.
- 4 lasagna noodles
- 1 egg
- 1 cup Ricotta cheese
- 1 cup shredded mozzarella, plus extra for sprinkling
- a generous sprinkling of shredded, shaved, or grated Parmesan cheese
- salt and pepper
- your favorite pasta sauce
- dried basil or parsley, for garnish
