Sweet potato salad

This recipe really ventured out of my comfort zone, for me. I’m actually not a big fan of sweet potatoes, even though they have a lot going for them compared to say yams. Also, I’m not a big fan of bacon.

However, this recipe caught my eye when I saw it in Capital Region Magazine at my parents’ apartment.

So many people bring potato salad or pasta salad to a cookout or a get together in the summer, and when I saw sweet potato salad, I had to take advantage of this excellent opportunity to bring something different to the table (pun intended).

Dijon potato salad

This is my go to potato salad recipe, and I adapted it from a recipe on AllRecipes.com here.

I just made this for a crowd for Mother’s Day so the serving size is rather large. Also, I made it the day before – it is just as good, if not even better, the next day.

Ingredients:

  • 12 medium red potatoes
  • 1 cup mayonnaise
  • 4 tsp Dijon mustard
  • 1/4 cup Parmesan cheese
  • 2 green onions, sliced
  • 1 oz apple cider vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
