After making awesome chicken Caesar lasagna rolls, I was inspired to make regular lasagna rolls. Although regular lasagna does usually keep well for leftovers, it’s nice to have the option the lasagna rolls give you of only preparing exactly what you need.
I saw a lasagna roll on Pinterest, but it only led to a picture so I didn’t find an actual recipe. So, I went off of a regular cheese lasagna recipe I typically use.
4 lasagna noodles
1 cup Ricotta cheese
1 cup shredded mozzarella, plus extra for sprinkling
a generous sprinkling of shredded, shaved, or grated Parmesan cheese
