What did the buffalo say to his son? (Bison.)

Well, I came in second out of four for this competition.

I was expecting to come in second, but was surprised by the dish mine lost to.

(Note on photo: We didn’t decide until the last minute if we were doing two competitions – appetizers and main dish – or putting all four in the same competitive pool, which we did end up doing. This is why two certificates say 1st and two say 2nd; 3rd and 4th just got bumped up a little bit, I suppose!)

My food writing homework

I had the third of six food writing classes this evening with the Table Hopping Times Union blogger Steve Barnes.

Our assignment this week was to write about the act of cooking. I opted to write about my buffalo chicken dip, which I made on Saturday.

After I read it to the class, Steve made a good suggestion on something key I left out that should have been mentioned – can you guess what it is?

Buffalo chicken dip

This fantastic dip is more or less a combination of this recipe and this recipe. It can be baked or slow cooked in the slow cooker.


  • 6 cups finely shredded chicken
  • 2 cups cream cheese
  • 1 1/4 cups Frank’s hot sauce
  • 1 cup Ranch dressing
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese

Of course, blue cheese always goes with buffalo chicken dip too (and other buffalo chicken dishes) – you can either substitute the Ranch dressing for blue cheese dressing, or mix in some crumbled blue cheese into the mix.

Buffalo chicken salad

As with the lats recipe I posted, this one I’ve made so many times I don’t really measure the ingredients anymore. This recipe is adapted from AllRecipes.com here.


  • 1 to 2 boneless, skinless, chicken breasts, chopped into bite-size pieces
  • salt and pepper
  • 1 1/2 tbsp vegetable oil
  • 1 head Romaine lettuce, chopped
  • 2 tbsp butter
  • 1/2 cup Frank’s Red Hot Sauce
  • 1 tsp Italian seasoning
  • 1/4 tsp garlic powder
  • 1/2 cup Ranch dressing
  • 1/4 cup chopped blue cheese

Side note: I accidentally bought fat free blue cheese today. Do not. Do that.
