I’ve been trying to eat more turkey. Well, I’ve been trying to eat less red meat and I already eat chicken constantly, so amping up the turkey intake seemed like the next step.
This recipe was an excellent transition into adding turkey to the dinner rotation.

- 1 egg, beaten
- 1/2 cup breadcrumbs
- 1/4 cup Parmesan cheese
- salt and black pepper
- olive oil
Combine breadcrumbs, salt, and pepper in a shallow bowl; have beaten egg in a second bowl. Dunk the turkey cutlets in the egg, followed by the breadcrumb mixture.
Then, cook cutlets in oil over medium-high heat, flipping when golden brown on the bottom.
Makes 2 servings.
