Taco chicken

Normally I make my own taco seasoning, but I had run out and was feeling lazy opted to be different and go with the perfectly usable and cheap seasoning packets.

A nod to Food.com for this one.

  • 2 boneless, skinless chicken breasts
  • 1 packet taco seasoning
  • 1/2 cup salsa
  • sour cream

Preheat oven to 375 degrees F.

I used one very large chicken breast and cut it in half lengthwise, then pounded flat for even cooking.

Place chicken with taco seasoning in a large Ziploc bag. Shake until coated evenly.

Coat a baking sheet with cooking spray and cook chicken breasts for about 30 minutes.

About 5 minutes before the ending time, distribute salsa evenly over each chicken.

When ready to serve, top with a dollop of sour cream.

Makes 2 servings.
