I found a new, wonderfully easy and flavorful dip recipe.
I pinned it recently and my sister-in-law (to be) commented, “If you want to know what to bring to our house to dinner next time, bring this.” Always nice when decisions are made easier for you!

- 2 tbsp olive oil
- 1/2 cup diced green bell pepper
- 1/2 cup diced onion
- 1 cup finely chopped chicken
- 3 tbsp fajita seasoning mix
- 1 pound Velveeta cheese, cubed
- 1 (10 oz) can diced tomatoes with chilies (undrained)
I boiled my chicken, chopped it into a few pieces, and threw it in my Ninja chopper; you can easily prepare chicken your own way and simply finely dice with a knife, too.
Heat the oil up in a skillet over medium-high heat and saute the peppers and onions; add chicken fajita seasoning and continue cooking for another minute.
I love this above picture, here. It looks like stuffing – makes me want to try making a chicken fajita stuffing!
Now, in a large saucepan, combine the cheese and canned tomatoes over medium-high heat and stir well until combined and creamy.
Stir the chicken mixture into the cheese mixture.
