The fiance found this one for me to try – I served them with honey mustard and ketchup dipping sauces, and chili cheese hot dogs. (What else would go with chicken nuggets? Comment and let me know, because I do not.)
- 3 skinless boneless, skinless chicken breasts
- 1 cup Italian seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp salt
- 1 tsp thyme
- 1 tbsp dried basil
- 1/2 cup butter, melted
Preheat the oven to 400 degrees F. Cut up the chicken into 1 1/2 inch chunks.
In a bowl, combine breadcrumbs, Parmesan cheese, salt, thyme, and basil – I had shaved Parmesan so I put it through a food processor first to make it more fine; melt the butter in a microwave in a second bowl.
Lightly grease a baking sheet. Dip the chicken pieces into the butter, then the breadcrumb mixture.
Arrange on baking sheet and bake for about 20 minutes.
