Broccoli cheese casserole

This is a great recipe I’ve been making for years from The Rookie Cook Cookbook. It is an excellent side dish recipe, and could also be used for brunch.


  • 8 cups broccoli
  • salt and pepper
  • 2 large eggs, fork-beaten
  • 1 (10 oz) can condensed cream of mushroom soup
  • 1 cup shredded Cheddar cheese, plus more for sprinkling
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 tsp onion powder

Preheat the oven to 350 degrees F. Then, chop up your broccoli. Cook it in salted boiling water for about 10 minutes.

In the meantime, combine the remaining ingredients in a casserole dish.

Mix well.

When the broccoli is ready, drain, and add to the casserole dish.

Sprinkle some extra Cheddar cheese on the top.

Bake, uncovered, for 35 to 40 minutes.

It is soooo good. It makes about 6 servings.
