Twice baked Ranch potatoes

Those Ranch seasoning packets are pretty great.  They can really put a nice kick into a lot of recipes, and this is one of them.

This is a recipe I modified from a couple of recipes, although the Ranch addition was mine: an AllRecipes.com recipe here, and also twice baked potatoes were one of the first recipes I ever tried as a kid from My First Cookbook (where the potatoes are made to look like boats, which can be fun).

Braised balsamic chicken

I make a lot of chicken breast recipes, and this is within the top five: it’s braised balsamic chicken, and the recipe is from AllRecipes.com here. I pretty much do not deviate from the original recipe at all.

Ingredients (adjusted for two servings):

  • 2 boneless, skinless, chicken breasts
  • black pepper
  • garlic salt
  • 2 tsp olive oil
  • about 1/4 to 1/3 onion, thinly sliced
  • 2 tbsp and 2 tsp balsamic vinegar
  • about 1/3 (14.5 oz) can diced tomatoes
  • 1/4 tsp dried basil
  • 1/4 tsp dried oregano
  • 1/4 tsp dried rosemary
  • 1/8 tsp dried thyme
